COLOMBIA CAUCA EL TAMBO : $11.5/lbs - $8.5/retail bag
This coffee out of southwest Colombia pulls together everything we want out of a washed coffee. A strong backbone of honeydew melon and graham cracker carry the cup to the finish that pull through like silky smooth oreo cream. We love this coffee on both espresso and pour overs. We wanted to put double stuffed oreos on the packaging, but didn’t want the big guys to come after us (lol). This coffee is from the ASMUCAFE project in El Tambo which is a women run organization that’s mission as an association is to improve their families' quality of life through coffee farming and to contribute positively to their community by working together and sharing resources, knowledge, and support.
The coffee, all of which is of Castillo variety, is picked as bright red cherries, and undergoes a somewhat unusual "double" fermentation process, as the women describe it: First, the cherries are left in the loading hoppers for 14 hours, then they are depulped in the afternoons and evening hours and placed into traditional open fermentation tanks for another 10 hours. Then they are washed three to four times before being dried either in parabolic dryers or in the sun for 8–12 days.

Have you ever had a really nice cocktail at a fancy bar with a Luxardo Cherry in it? That is what this coffee reminds us of.. It shares sweet notes of cocoa nibs, cherry and sweet nougat or caramel with some light lemon zest slipping through on the back end. This coffee hailing from the Kebado Washing Station in Sidama Ethiopia and it is sure to satisfy any and all that are wanting that quintessential natural Ethiopian cup... you know what we're talking about.

FINCA LAS FLORES - LIMITED RUN : $14.40/lbs - $12.50/retail bag
Our first Legendary Collection Coffee comes to us from Honduras. It is a naturally processed coffee that boasts notes of fruit punch, strawberry candy, floral finish. In the first sip, our taste buds are flooded with bright tropical fruit notes ranging from pineapple to sweet mango. The body of the coffee is syrupy and sweet and it reminds us of red vines candy. As the coffee cools it develops juicy mouthfeel that lingers with a pleasant jasmine tea or honeysuckle finish. We love this coffee and think it is the best coffee we’ve served thus far our of our roasting program. It is definitely geared towards the coffee enthusiasts looking for a complex pour over or a nice sipping espresso.
About the Farmer: Roger Antonio Domínguez Márquez owns several farms in La Paz, Marcala. Roger is a young producer who inherited his father’s midsize farms, which came into the family in the early 1990s. He has three parcels of land in Marcala, all between 3–5 hectares, at good altitude for the region, above 1,300 meters. He grows a small variety of heirloom types, mostly Bourbon, Catuai, and Caturra, and he’s specific about his wet-milling and drying.

PAPUA NEW GUINEA - RIVERSIDE MILL : $13.30/lbs - $11.75/retail bag
This coffee is a delightful combination of fruity and earthy flavors with notes of stonefruit, sweet tobacco, and grapefruit zest. About Riverside Mill: This coffee has a unique story: It is the initiative of Moses Venapo, an entrepreneurial producer in the Eastern Highlands, who wanted to offer local smallholders better access to higher market prices as well as a higher-traceability option. While most coffee in Kabiufa is delivered in parchment in small quantities to roadside delivery points, Moses established a cherry-buying facility as well as installed a wet mill in his backyard in order to have more control over the purchasing and processing. The coffee is bought in cherry at a significant premium to the general market, and sorted carefully, providing farmers with feedback about best practices in picking.
This is a new, small project that so far serves around 50 smallholders within Moses' village and the neighboring villages, but we see a lot of promise based on the cup quality and ingenuity of the venture.
